This hearty and comforting beef stew is cooked slowly in a crockpot, making the meat and vegetables tender and flavorful.
Ingredients:
- 2 lbs beef stew meat, cubed
- 4 potatoes, peeled and diced
- 3 carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 14
- 5 oz diced tomatoes
- 4 cups beef broth
- 1/4 cup all-purpose flour
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
Toss the beef cubes in flour in a bowl until they are well covered
Add the beef cubes that have been coated to the slow cooker
Mix in the diced tomatoes, thyme, rosemary, salt, and pepper, along with the potatoes and carrots
Cover the slow cooker and add beef broth
Mix everything together slowly
There should be no leaks
Cook on low for 8 to 10 hours or high for 4 to 5 hours, until the beef is soft and the vegetables are done
