Slow Cooker Pork Cassoulet

Ingredients:

  • 1 lb pork shoulder, cut into chunks
  • 1 lb smoked sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 cans 15 oz each cannellini beans, drained and rinsed
  • 1 can 14 oz diced tomatoes
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a slow cooker, combine pork shoulder, smoked sausage, onion, garlic, carrots, celery, cannellini beans, diced tomatoes, chicken broth, white wine, bay leaves, dried thyme, salt, and pepper

Cover and cook on low for 6-8 hours or until the pork is tender and flavors are well combined

Before serving, remove bay leaves and adjust seasoning if needed

Garnish with fresh parsley
