While this BKR Bacon, Kale, and Ricotta Sandwich is being made, crispy bacon, sauted kale, and creamy ricotta cheese are being put between slices of hearty whole grain bread. This sandwich is tasty and filling, so you can eat it for any meal of the day.
Ingredients:
- 4 slices of thick-cut bacon
- 2 cups of kale, stems removed and chopped
- 1/2 cup of ricotta cheese
- 4 slices of whole grain bread
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
In a pan over medium heat, cook bacon until it's crispy
Take it out of the pan and let it drain on paper towels
Put kale and olive oil in the same pan
It will take about 34 minutes of cooking until the kale is soft and wilted
Add pepper and salt
Toast the whole grain bread until it turns golden brown
Cover every toasted piece of bread with ricotta cheese
Put ricotta and cooked kale on two slices of bread
Add crispy bacon slices to the kale
To make sandwiches, put the last few slices of bread on top
Cut the sandwiches in half and serve them right away
